Simmered Tuscan Chicken
1 pound boneless chicken breast, cut into 1-inch cubes
2 cloves garlic, minced
2 tablespoons olive oil
4 medium potatoes, cut into 1/2-inch cubes (about 4 cups)
1 medium red bell pepper, diced
1 (27.7 ounces) jar Ragu Old World Style Pasta Sauce
1 pound fresh or frozen cut green beans
1 teaspoon dried basil
1/2 teaspoon salt
1/8 teaspoon pepper
In a 12-inch skillet, sauté chicken and garlic in olive oil until chicken is
lightly browned. Add potatoes and peppers; continue to cook about 5 minutes,
stirring occasionally. Add sauce, basil, green beans, salt and pepper; bring to boil.
Reduce heat to medium-low; cover and simmer for 35 minutes or until chicken is
thoroughly cooked and potatoes are tender. Stir occasionally. Serve over rice or
pasta or eat just like it is with bread.
